recipe: quick & easy pumpkin & cream cheese roll

it is now fall; which means pumpkin pie, pumpkin muffin, pumpkin spice latte, pumpkin crisp, pumpkin pancake, pumpkin bread, pumpkin cookie, pumpkin cake, pumpkin scones and one of my favorites, pumpkin & cream cheese roll! {sounds unappetizing I know; but it’s so delicious}

this recipe is originally from The Pampered Chef but there very few changes.

Pumpkin Roll Cake

Yield: 10 servings      Prep time: 20 minutes      Cook Time: 15 minutes
Ingredients

Pumpkin cake

  • 3 eggs
  • 1 cup white sugar
  • 1/2 teaspoon cinnamon
  • 3/4 cup pumpkin {not to be confused with pumpkin pie filling}
  • 3/4 cup all purpose flour
  • 1 teaspoon baking soda

Cream cheese frosting:

  • 2 tablespoons butter
  • 8 ounces cream cheese
  • 1 cup confectioners sugar
  • 1/4 teaspoon vanilla extract

Optional:

  • confectioners sugar for dusting
Let’s get baking!!
  1. Preheat oven to 375 F. Use nonstick spray to grease one 10×15 inch jelly roll pan. {I typically use a cookie sheet with sides}
  2. In a mixing bowl, blend together the pumpkin, eggs, sugar and cinnamon. pumpkin roll1
  3. In a separate bowl, mix together flour and baking soda. then add to pumpkin mixture and blend until smooth. Evenly spread the mixture over the prepared jelly roll pan.pumpkin roll 2
  4. Bake 12-15 minutes.
  5. Prepare the frosting by blending together the butter, cream cheese, confectioners sugar, and vanilla.pumpkin roll3
  6. Remove from oven and allow to cool enough to handle. Remove cake from pan and place on a cotton dish towel. Roll up the cake by rolling a towel inside cake and place seam side down to cool for about 20 minutes.
  7. When cake is completely cooled, unroll and spread with cream cheese frosting. Roll the cake up again, without the towel. Wrap with plastic wrap and refrigerate until ready to serve.pumpkin roll4
  8. Once ready to serve, sprinkle top with confectioners sugar and slice into 8-10 servings. Enjoy!!
